Oriental Sprouted Pea Salad

1 cup sprouted peas
½ cup sprouted sunflower or pumpkin seeds
½ cup carrots, finely shredded
½ cup arugula cut in small pieces
½ cup red pepper, diced
½ cup water chestnuts, diced (optional)
1 Tbsp. cilantro, chopped
1 Tbsp. sesame seeds (toasted or raw)
1 Tbsp. fresh ginger, finely grated
2 Tbsp. organic Tamari soy sauce
2 Tbsp. roasted sesame oil
Juice of one lime

In medium bowl, combine peas, sunflower seeds, carrots, arugula,
red pepper, water chestnuts, and cilantro.  In small bowl, whisk together
sesame seeds, ginger, tamari, sesame oil and lime juice.  Pour over
salad ingredients and toss.  Serves 4

Pea sprouts – Pea sprouts contain much calcium, carotene,
vitamin B and C. Vitamin B is essential in smooth skin
complexion and suppressing excess sebum secretion.
Juice pressed from fresh pea sprout is used by women
in the countryside as a natural facial mask for finer skin.
